Chef Sakuta’s attention to detail extends beyond cuisine. Special attention is paid to the interior as it plays a vital part in every guest’s experience.

An unbroken piece of hinoki over 5 metres long takes pride of place in the dining room which seats 10 with another intimate private dining room accommodates 6 guests.

Carved out of a 200-year-old Yoshino cypress tree from Nara Prefecture, the counter in the restaurant has an imposing presence and completes the dining experience with its faint scent and appearance. It’s designed to allow guests to overlook the counter and observe the sophisticated techniques and precision of the chefs.

Guests can appreciate the luxury with all their senses as they sit by the cypress counter that embodies the traditional beauty of Japan, as they enjoy the premium sushi meticulously prepared by our Michelin-starred chefs – using traditional techniques and experience in Edomae-style sushi.
